As COVID had challenged plans to gather for the usual Mother-Son Dinner, the Summer Hill Auxiliary have arranged two great alternatives:
Mother-Son Pre-Recorded Cooking Class
The recorded cooking class from Madame Foodie, created especially for Trinity, teaches you how to make the following dishes:
Fresh Spring Rolls with poached coconut chicken
Stuffed Squid
Polenta Spiced Crusted Chicken
Satay Sauce with Dukkah Tofu
3 Ingredient Banana Ice Cream
All are dairy, sugar, and gluten free.

The Summer Hill Auxiliary has also arranged for a select menu that parents are able to order and have home delivered* on Friday November 19 or Friday November 26.

The menu is $150 for two people and includes:
Entrée – choice of 1:
Stuffed Squid with Fetta, Brown Rice, Fresh Herbs served in a basil tomato sauce
Make your own rice paper roll kit – all included with coconut poached chicken. Veggies, rice noodles, rice paper rolls and dipping sauce
Vego – Popcorn Cauliflower on a bed of healthy vego fried rice
Main – choice of 1
Slow Cooked Moroccan Lamb with Sweet Potato Mash, Seasonal Veggies and Garlic Mint Yoghurt
Coconut Curry Inspired Roasted Salmon Fillet with Basmati Rice, pickled ginger and fresh coriander
Vego – Stuffed Greek Eggplants with lentils, fetta and fresh mint
Dessert
Dessert board – selection of different desserts
All the above menu is gluten free.
